Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine all Vegetable ingredients with the crushed tomatoes, olive oil, white wine (if using), water, and Herbs & Seasoning ingredients. Mix well.
- Spread half of the tomato mixture in the bottom of a baking dish.
- Arrange the Fish fillets over the tomato mixture.
- Cover the fish with the remaining tomato mixture.
- Bake for 30-40 minutes, or until the fish is cooked through and flakes easily with a fork.
- Let stand for a few minutes before serving. Garnish with fresh parsley if desired.
