A sophisticated pumpkin bread featuring dark molasses, a hint of bourbon in the glaze, and a crunchy spiced pepita topping.
Instructions
  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together all Dry Ingredients.
  3. In a separate bowl, combine all Wet Ingredients. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour batter into the prepared loaf pan.
  6. In a small bowl, toss the Spiced Pepitas with maple syrup, chili powder, and salt. Spread on a baking sheet and bake for 5-7 minutes, until toasted and fragrant. Let cool.
  7. Sprinkle the spiced pepitas evenly over the batter.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
