Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
Form the Crust: Flatten the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Roll and Bake Crust: On a lightly floured surface, roll out the dough to a 12-inch circle. Transfer to a 9-inch pie plate. Crimp the edges. Prick the bottom of the crust with a fork. Bake at 375°F (190°C) for 15 minutes.
Prepare the Filling: In a large bowl, combine all Filling ingredients and whisk until smooth.
Bake the Pie: Pour the filling into the pre-baked crust. Bake for 50-60 minutes, or until a knife inserted near the center comes out clean. Let cool completely before serving.
