Instructions
Preheat oven to 375°F (190°C).
Caramelize Onions: Heat Unsalted Butter in a skillet over medium-low heat. Add Vidalia Onion and cook, stirring occasionally, for 30-40 minutes, or until deeply golden brown and caramelized. Stir in Balsamic Glaze during the last 5 minutes. Set aside.
Truffle Aioli: In a small bowl, whisk together Mayonnaise, Truffle Oil, minced Garlic, and Lemon Juice. Set aside.
In a bowl, gently combine all Burger Patties ingredients. Form into 6 small patties, slightly larger than the bagel halves. Do not overwork the meat.
Place the burger patties on a baking sheet lined with parchment paper and bake for 8-10 minutes for medium-rare, or longer to desired doneness.
Once the patties are cooked, place a slice of Gruyère Cheese on each patty during the last minute of baking to melt.
Spread a generous layer of Truffle Aioli on the cut side of each bagel half.
Place a cheeseburger patty on the sauced bagel half. Top with Caramelized Onions and a slice of Cornichon.
