To make Brown Butter: Melt butter in a saucepan over medium heat. Continue cooking, swirling occasionally, until butter turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.
To make Vanilla Bean Syrup: Combine Sugar and Water in a saucepan. Add split Vanilla Bean and scrapings. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool, then remove Vanilla Bean.
In a large bowl, whisk together all Waffle Batter ingredients, using Brown Butter instead of melted butter, until just combined. Do not overmix.
Divide the batter into three bowls. Add Natural Red Food Coloring to one bowl, Natural Yellow Food Coloring to another, and Natural Blue Food Coloring to the third. Mix well.
In a separate bowl, combine all Cinnamon Roll Filling ingredients and mix until a paste forms.
Preheat your waffle iron according to the manufacturer's instructions.
Pour a small amount of each colored batter onto the hot waffle iron, creating a rainbow effect. Do not overfill.
Spoon a small amount of Cinnamon Roll Filling over the batter.
Close the waffle iron and cook until golden brown and crispy, about 3-5 minutes.
