Instructions
  1. Prepare Lavender Honey: Gently warm the honey in a small saucepan. Add the lavender buds and simmer for 5 minutes. Remove from heat and let steep for 30 minutes. Strain the honey through a fine-mesh sieve.
  2. Prepare Waffles: In a large bowl, whisk together the cake flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the milk, eggs, and melted butter.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Divide the batter into three bowls.
  5. Add red food coloring to one bowl, yellow to another, and blue to the third. Mix well.
  6. Cook the waffles according to your waffle maker's instructions.
  7. Prepare Filling: In a bowl, whip together the mascarpone cheese and powdered sugar until smooth.
  8. Assemble Sandwiches: Spread the mascarpone mixture onto two waffles. Drizzle with lavender honey. Layer with prosciutto and arugula. Top with the remaining waffles.
  9. Cut in half and serve immediately.
