Instructions
- Prepare Lavender Honey: Gently warm the honey in a small saucepan. Add the lavender buds and simmer for 5 minutes. Remove from heat and let steep for 30 minutes. Strain the honey through a fine-mesh sieve.
- Prepare Waffles: In a large bowl, whisk together the cake flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, eggs, and melted butter.
- Add the wet ingredients to the dry ingredients and mix until just combined. Divide the batter into three bowls.
- Add red food coloring to one bowl, yellow to another, and blue to the third. Mix well.
- Cook the waffles according to your waffle maker's instructions.
- Prepare Filling: In a bowl, whip together the mascarpone cheese and powdered sugar until smooth.
- Assemble Sandwiches: Spread the mascarpone mixture onto two waffles. Drizzle with lavender honey. Layer with prosciutto and arugula. Top with the remaining waffles.
- Cut in half and serve immediately.
