Prepare the Pickled Red Onion: Combine Apple Cider Vinegar, Sugar, and Salt in a small saucepan. Bring to a simmer, then pour over the thinly sliced Red Onion. Let sit for at least 30 minutes.
Prepare the Herb Butter: In a small bowl, combine the softened European-Style Butter and finely chopped Fresh Herbs. Mix well and set aside.
In a large bowl, whisk together the Waffle Batter ingredients: sourdough starter, flour, whole wheat flour, baking powder, baking soda, and salt.
In a separate bowl, whisk together the eggs and whole milk.
