Instructions
- Prepare the Dipping Sauce: In a small bowl, combine all Dipping Sauce ingredients and mix well. Set aside.
- In a medium bowl, whisk together all Batter ingredients until just combined. Do not overmix.
- Gently fold the chopped Razor Clams into the Batter.
- Heat the Peanut Oil in a deep fryer or large pot to 350°F (175°C).
- Drop spoonfuls of the clam mixture into the hot oil, being careful not to overcrowd the pot.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove the fritters with a slotted spoon and drain on paper towels.
- Serve immediately with the prepared Dipping Sauce.
