Instructions
  1. Prepare the Dipping Sauce: In a small bowl, combine all Dipping Sauce ingredients and mix well. Set aside.
  2. In a medium bowl, whisk together all Batter ingredients until just combined. Do not overmix.
  3. Gently fold the chopped Razor Clams into the Batter.
  4. Heat the Peanut Oil in a deep fryer or large pot to 350°F (175°C).
  5. Drop spoonfuls of the clam mixture into the hot oil, being careful not to overcrowd the pot.
  6. Fry for 2-3 minutes per side, or until golden brown and crispy.
  7. Remove the fritters with a slotted spoon and drain on paper towels.
  8. Serve immediately with the prepared Dipping Sauce.
