Red Flannel Hash
A refined Red Flannel Hash featuring slow-cooked corned beef brisket, roasted beets, and a perfectly poached egg for a luxurious brunch experience.

Fingerling Potatoes-diced

Roasted Beets-diced
1/2 cup
Shallots-minced
1 tsp

A refined Red Flannel Hash featuring slow-cooked corned beef brisket, roasted beets, and a perfectly poached egg for a luxurious brunch experience.
Instructions
- In a large skillet, heat Duck fat over medium heat.
- Add Shallots and cook until translucent, about 3 minutes.
- Add Potatoes and cook until golden brown and tender, about 20-25 minutes, stirring occasionally.
- Add Corned beef brisket and Roasted Beets to the skillet. Season with Fleur de sel and Black pepper.
- Cook for another 5-7 minutes, stirring occasionally, until heated through.
- Deglaze the pan with Sherry vinegar.
- Poach Eggs to desired doneness.
- Divide the hash among plates. Top each serving with a Poached Egg and garnish with Chives.
- Serve immediately.
