2 cups Fingerling Potatoes-diced
1 cup Roasted Beets-diced
1/2 cup Shallots-minced
1 tsp Fleur de sel

Instructions
  1. In a large skillet, heat Duck fat over medium heat.
  2. Add Shallots and cook until translucent, about 3 minutes.
  3. Add Potatoes and cook until golden brown and tender, about 20-25 minutes, stirring occasionally.
  4. Add Corned beef brisket and Roasted Beets to the skillet. Season with Fleur de sel and Black pepper.
  5. Cook for another 5-7 minutes, stirring occasionally, until heated through.
  6. Deglaze the pan with Sherry vinegar.
  7. Poach Eggs to desired doneness.
  8. Divide the hash among plates. Top each serving with a Poached Egg and garnish with Chives.
  9. Serve immediately.
