Instructions
- Cut chicken breasts into 1-inch bite-sized pieces.
- Prepare the Breading by combining flour, garlic powder, pepper, and salt in a shallow dish.
- Prepare the Egg Wash by whisking eggs and milk in a separate shallow dish.
- Prepare the Dipping Sauce by combining sweet chili sauce and mayonnaise in a small bowl.
- Dredge each chicken piece in the flour mixture, then dip in the egg wash, and finally coat thoroughly with shredded coconut.
- Heat vegetable oil in a large skillet over medium-high heat.
- Fry the coconut-coated chicken in batches for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the bites and place them on a paper towel-lined plate to drain excess oil.
- Serve immediately with the Dipping Sauce.
