  1. Cut chicken breasts into 1-inch bite-sized pieces.
  2. Prepare the Breading by combining flour, garlic powder, pepper, and salt in a shallow dish.
  3. Prepare the Egg Wash by whisking eggs and milk in a separate shallow dish.
  4. Prepare the Dipping Sauce by combining sweet chili sauce and mayonnaise in a small bowl.
  5. Dredge each chicken piece in the flour mixture, then dip in the egg wash, and finally coat thoroughly with shredded coconut.
  6. Heat vegetable oil in a large skillet over medium-high heat.
  7. Fry the coconut-coated chicken in batches for 3-4 minutes per side, or until golden brown and cooked through.
  8. Remove the bites and place them on a paper towel-lined plate to drain excess oil.
