  1. Prepare the Shrimp: Pat the Shrimp dry with paper towels.
  2. Make the Coconut Coating: In a shallow dish, combine all Coconut Coating ingredients.
  3. Make the Egg Wash: In another shallow dish, whisk together the Eggs and Heavy Cream.
  4. Coat the Shrimp: Dip each Shrimp in the Egg Wash, then dredge in the Coconut Coating, pressing to adhere.
  5. Make the Dipping Sauce: In a small bowl, whisk together the Pineapple Juice, Sweet Chili Sauce, Rice Vinegar, Soy Sauce, and Ginger.
  6. Fry the Shrimp: Heat Vegetable Oil in a large skillet over medium-high heat. Fry the Shrimp in batches for 2-3 minutes per side, until golden brown and cooked through.
