Instructions
  1. Prepare rice pilaf: Heat Olive oil in a saucepan. Sauté Onion until softened. Add Basmati rice and toast for 1 minute. Add water (according to rice package directions) and cook until rice is tender.
  2. Steam Broccoli florets until tender-crisp.
  3. In a large skillet, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1-2 minutes to create a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
  5. Stir in Dry sherry and cook for 1 minute.
  6. Reduce heat to low and stir in Sharp Cheddar cheese, Gruyere cheese, Nutmeg, and Cayenne pepper until cheeses are melted and sauce is smooth.
  7. Season Seafood with salt and pepper.
  8. Add Seafood to the cheese sauce and cook until heated through and Seafood is cooked through (about 5-7 minutes).
  9. Serve Seafood and sauce over rice pilaf, with steamed broccoli on the side.
