Instructions
- Prepare rice pilaf: Heat Olive oil in a saucepan. Sauté Onion until softened. Add Basmati rice and toast for 1 minute. Add water (according to rice package directions) and cook until rice is tender.
- Steam Broccoli florets until tender-crisp.
- In a large skillet, melt Butter over medium heat. Whisk in All-purpose flour and cook for 1-2 minutes to create a roux.
- Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
- Stir in Dry sherry and cook for 1 minute.
- Reduce heat to low and stir in Sharp Cheddar cheese, Gruyere cheese, Nutmeg, and Cayenne pepper until cheeses are melted and sauce is smooth.
- Season Seafood with salt and pepper.
- Add Seafood to the cheese sauce and cook until heated through and Seafood is cooked through (about 5-7 minutes).
- Serve Seafood and sauce over rice pilaf, with steamed broccoli on the side.
