1 tsp Salt
1/2 tsp Black pepper
8 oz Lump crab meat
4 oz Shrimp - peeled and deveined, chopped

Instructions
  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season Flounder fillets with Salt and Black pepper.
  3. Combine all Filling ingredients in a bowl and mix well.
  4. Spread the Filling evenly over each Flounder fillet.
  5. Sprinkle a light layer of Panko bread crumbs over the filling.
  6. Place the stuffed Flounder fillets in the prepared baking dish.
  7. Bake for 25-30 minutes, or until the Flounder is cooked through and the filling is golden brown.
  8. While the Flounder is baking, prepare the Sauce. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes to create a roux.
  9. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
  10. Stir in Dry sherry and Lemon juice, Salt, and White pepper. Cook for another 3-4 minutes, or until the sauce has thickened.
  11. Pour the Sauce over the baked Flounder fillets and serve immediately.
