In a large skillet, cook the Ground beef & Chorizo over medium-high heat, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the Vegetables to the skillet and cook until softened, about 5-7 minutes.
Stir in the Seasoning and cook for 1 minute more.
Reduce heat to low. Add the Cheese Sauce ingredients to the skillet and stir constantly until melted and smooth.
Pour the Fundido into a serving dish and serve immediately with Tortilla chips.
