An enhanced version of the classic Fundido, featuring succulent shrimp and a more complex spice blend. A creamy, flavorful dip perfect for sharing.
Instructions
- Season the Shrimp with salt, pepper, and a pinch of cayenne pepper. Set aside.
- In a large skillet, cook the Ground beef & Chorizo over medium-high heat, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the Vegetables to the skillet and cook until softened, about 5-7 minutes. Stir in the Fire-roasted diced tomatoes.
- Add the Seasoning and cook for 1 minute more.
- Add the Shrimp to the skillet and cook until pink and opaque, about 3-5 minutes.
- Reduce heat to low. Add the Cheese Sauce ingredients to the skillet and stir constantly until melted and smooth.
- Pour the Fundido into a serving dish, garnish with Fresh cilantro, and serve immediately with Tortilla chips.
