Instructions
  1. Preheat oven to 400°F (200°C).
  2. Prepare Cheddar Biscuits: Whisk together flour, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in buttermilk and cheddar cheese until just combined. Drop by spoonfuls onto a baking sheet and bake for 12-15 minutes.
  3. Prepare Filet Mignon: Pat steaks dry and season generously with salt and pepper. Heat duck fat in a cast iron skillet over medium-high heat. Add rosemary and garlic to the skillet. Sear steaks for 3-4 minutes per side for medium-rare, basting with duck fat.
  4. Prepare Lobster Tail: Cut lobster tails lengthwise and remove the vein. Brush with clarified butter, paprika, and lemon juice. Broil for 5-7 minutes, or until lobster meat is opaque.
