A gourmet take on the classic, featuring a sourdough crust, a white wine-butter sauce, and locally sourced clams.
Instructions
  1. Preheat oven to 550°F (288°C) with a pizza stone inside for at least 30 minutes.
  2. Prepare the White Sauce: Melt Butter in a saucepan over medium heat. Add Garlic and cook until fragrant, about 1 minute. Deglaze with White Wine and simmer until reduced by half. Stir in Heavy Cream, Parmesan Cheese, Lemon Juice, Nutmeg, Sea Salt, and White Pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Prepare the Clams: In a separate pan, heat Olive Oil over medium-high heat. Add chopped Clams and cook until they open, about 3-5 minutes. Discard any clams that do not open.
  4. Gently stretch the Sourdough Pizza Dough to your desired thickness and shape, avoiding degassing the dough.
  5. Spread the White Sauce evenly over the pizza dough, leaving a small border for the crust.
  6. Sprinkle the cooked Clams evenly over the sauce.
  7. Sprinkle with Red Pepper Flakes and Parmesan Cheese.
  8. Bake for 6-8 minutes, or until the crust is golden brown and the clams are bubbly.
  9. Garnish with Fresh Parsley and Basil before slicing and serving.
