Instructions
Prepare the Churro Crumble: Combine flour, sugars, cinnamon, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Bake at 350°F (175°C) for 12-15 minutes, or until golden brown. Let cool.
Prepare the Chocolate Ganache: Heat heavy cream in a saucepan until simmering. Pour over chopped chocolate and let sit for 1 minute. Whisk until smooth and glossy.
In a shallow dish, whisk together all Custard ingredients.
Cut the Brioche loaf into 1-inch cubes.
Dip each bread cube into the Custard, ensuring it’s fully coated.
Dredge the custard-soaked bread in the Churro Crumble, pressing gently to adhere.
Heat Clarified butter in a large skillet over medium heat.
Cook the French toast bites in batches for 2-3 minutes per side, or until golden brown and cooked through.
Transfer the cooked bites to a plate and immediately top with Mini marshmallows. Drizzle with Chocolate Ganache. Serve immediately.
