Instructions

  1. **Marshmallow Fluff:** Combine Sugar, Water, and Cream of Tartar in a saucepan. Cook over medium heat, stirring until sugar dissolves. Bring to a boil and cook without stirring until a soft-ball stage (235-240°F/113-116°C). While the sugar syrup is cooking, beat Egg Whites until stiff peaks form. Slowly pour hot sugar syrup into the egg whites, beating constantly. Continue beating until the mixture is cool and glossy. Stir in Vanilla Extract.
  2. Brush melted Butter evenly over two tortillas.
  3. Spread Marshmallow Fluff evenly over the buttered tortillas.
  4. Sprinkle chopped Dark Chocolate and Chocolate Graham Crackers pieces over the marshmallow fluff.
  5. Place the remaining two tortillas on top to create sandwiches.
  6. Cook in a lightly oiled skillet over medium-low heat for 4-5 minutes per side, or until golden brown and the marshmallows are melted and gooey. Be careful not to burn the brioche.
  7. Drizzle with Salted Caramel sauce and serve immediately.
