Instructions
- In a large bowl, combine all Chicken with all Marinade ingredients. Toss to coat and marinate for at least 2 hours, or preferably overnight.
- Heat a large cast iron skillet over medium-high heat.
- Add the marinated Chicken to the hot skillet and sear for 3-4 minutes per side, until browned and slightly charred.
- Remove the Chicken from the skillet and set aside.
- Add the Vegetables to the skillet and cook for 5-7 minutes, until tender-crisp and slightly charred.
- Return the Chicken to the skillet with the Vegetables and cook for another 2-3 minutes, until heated through.
- Warm the Filling tortillas according to package directions.
- Serve the Chicken and Vegetables in the warm tortillas with Queso fresco, Cilantro, and Lime wedges.
