Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss Shrimp with Olive oil and Shrimp Seasoning. Ensure shrimp are evenly coated.
  3. Combine seasoned Shrimp, Pineapple, and Red onion on a baking sheet.
  4. Roast for 10-12 minutes, or until shrimp are pink and opaque and vegetables are slightly caramelized.
  5. While shrimp is roasting, prepare Mango Salsa: In a medium bowl, combine all Mango Salsa ingredients. Mix well and set aside.
  6. Warm Corn tortillas according to package directions.
  7. Fill tortillas with roasted shrimp and vegetable mixture. Top with Avocado crema and Mango Salsa.
