Instructions
  1. Slow Cook Beef: Season the Chuck Roast with salt and pepper. Sear on all sides in a hot skillet. Place in a slow cooker with 1 cup of beef broth. Cook on low for 6-8 hours, or until fork-tender. Shred the beef.
  2. Caramelize Onions: Melt the Butter in a large skillet over medium-low heat. Add the Yellow Onions and cook slowly for 45-60 minutes, stirring occasionally, until deeply caramelized and golden brown.
  3. Make Sauce: Combine all Sauce ingredients in a saucepan and simmer for 15 minutes, stirring occasionally.
  4. Combine Beef and Sauce: Add the shredded beef and Caramelized Onions to the sauce. Simmer for another 10 minutes.
  5. Assemble Quesadillas: Lay out four Flour Tortillas. Sprinkle 1/4 cup of Gruyere Cheese and 1/4 cup of Fontina Cheese evenly over each tortilla.
  6. Top the cheese with 1/4 of the Sloppy Joe mixture. Sprinkle another 1/4 cup of Gruyere Cheese and 1/4 cup of Fontina Cheese over the Sloppy Joe mixture.
  7. Top with another Flour Tortilla.
  8. Heat a large skillet or griddle over medium heat. Cook the quesadillas for 5-6 minutes per side, or until golden brown and the cheese is melted and bubbly.
  9. Cut each quesadilla into wedges and serve immediately.
