Instructions
  1. In a large skillet, brown the Ground Beef over medium-high heat. Drain off any excess grease.
  2. Add the Diced Red Onion to the skillet during the last 5 minutes of browning the beef.
  3. Combine all Sauce ingredients in a bowl and stir well. Pour the sauce over the browned Ground Beef and simmer for 15 minutes, stirring occasionally.
  4. Lay out four Flour Tortillas. Sprinkle 1/4 cup of Cheddar Cheese and 1/4 cup of Monterey Jack Cheese evenly over each tortilla.
  5. Top the cheese with 1/4 of the Sloppy Joe mixture. Sprinkle another 1/4 cup of Cheddar Cheese and 1/4 cup of Monterey Jack Cheese over the Sloppy Joe mixture.
  6. Top with another Flour Tortilla.
  7. Heat a large skillet or griddle over medium heat. Cook the quesadillas for 4-5 minutes per side, or until golden brown and the cheese is melted and bubbly.
  8. Cut each quesadilla into wedges and serve immediately.
