Instructions
  1. Combine all Brine ingredients in a large bowl. Add Chicken Thighs, ensuring they are fully submerged. Brine for 4-8 hours in the refrigerator.
  2. Prepare Peach Chutney: In a saucepan, combine all Peach Chutney ingredients. Bring to a simmer and cook for 15-20 minutes, or until peaches are softened and chutney has thickened. Set aside.
  3. Remove Chicken Thighs from brine and pat dry.
  4. In a medium bowl, whisk together all Sauce ingredients until well combined.
  5. Place Chicken Thighs in the slow cooker.
  6. Pour Sauce over the Chicken Thighs, ensuring they are evenly coated.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is very tender.
  8. Shred the chicken with two forks and serve with Peach Chutney.
