Instructions
  1. Combine all Brine ingredients in a large bowl and dissolve salt and sugar. Submerge the Chicken in the brine and refrigerate for at least 4 hours, or up to overnight.
  2. Remove the Chicken from the brine and pat dry.
  3. Combine all Spice Rub ingredients in a small bowl.
  4. Rub the Spice Rub all over the Chicken.
  5. In a slow cooker, place the Chicken.
  6. In a medium saucepan, combine all Sauce ingredients. Bring to a simmer over medium heat and cook for 20-25 minutes, stirring occasionally, until the sauce has thickened slightly.
  7. Pour the Sauce over the Chicken, ensuring it's evenly coated.
  8. Cover and cook on low for 6-8 hours, or until the chicken is very tender and easily pulls apart.
  9. Shred the chicken with two forks and stir to coat with the sauce.
  10. Serve on brioche buns, with sides of gourmet coleslaw and roasted sweet potatoes.
