Instructions
  1. Rehydrate the Guajillo and Ancho chiles by placing them in a bowl and covering with hot water for 30 minutes. Drain and discard the water.
  2. Combine all Marinade ingredients in a blender and blend until smooth.
  3. Place the Beef in the slow cooker. Pour the marinade over the beef, ensuring it is fully coated.
  4. Cover and cook on low for 8-10 hours, or until the beef is extremely tender and easily shredded.
  5. Shred the beef with two forks, discarding any excess fat.
  6. Warm the Corn Tortillas according to package directions.
  7. Serve the shredded beef in the warm tortillas with chopped white onion, cilantro, and lime wedges.
