1 Yellow onion-diced
2 Carrots-sliced
2 Celery stalks-sliced

Instructions
  1. Heat Olive oil in a skillet over medium heat. Add Onion, Carrots, and Celery and cook until softened, about 5-7 minutes.
  2. Add Garlic and cook for 1 minute more.
  3. Transfer the vegetables to the slow cooker.
  4. Place Chicken into the slow cooker.
  5. Combine Chicken broth, Dried thyme, Dried rosemary, Salt, Black pepper, and Bay leaf and pour over the chicken and vegetables.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Remove the chicken from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
  8. Add Noodles to the slow cooker and cook on high for 20-30 minutes, or until noodles are tender.
  9. Stir in Lemon juice and Fresh parsley before serving.
  10. Remove bay leaf before serving.
