Slow Cooker Chicken Noodle Soup

A richer and more flavorful chicken noodle soup, featuring fresh herbs and a touch of acidity.
Instructions
- Heat Olive oil in a skillet over medium heat. Add Onion, Carrots, and Celery and cook until softened, about 5-7 minutes.
- Add Garlic and cook for 1 minute more.
- Transfer the vegetables to the slow cooker.
- Place Chicken into the slow cooker.
- Combine Chicken broth, Dried thyme, Dried rosemary, Salt, Black pepper, and Bay leaf and pour over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
- Add Noodles to the slow cooker and cook on high for 20-30 minutes, or until noodles are tender.
- Stir in Lemon juice and Fresh parsley before serving.
- Remove bay leaf before serving.
