Instructions
  1. Preheat oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 45-60 minutes, or until soft and caramelized. Let cool and squeeze out the roasted garlic.
  2. Place Sausage in the slow cooker.
  3. Add Vegetables to the slow cooker.
  4. In a bowl, combine all Sauce ingredients, including the roasted garlic, and pour over the sausage and vegetables.
  5. Stir to combine.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. Serve on Ciabatta Rolls, topped with Pecorino Romano Cheese and Fresh Parsley.
