Slow Cooker Sausage And Peppers
A sophisticated take on the classic, featuring high-quality Italian sausage, roasted garlic, Calabrian chili paste for a subtle heat, and a splash of dry red wine.
Preheat oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 45-60 minutes, or until soft and caramelized. Let cool and squeeze out the roasted garlic.
Place Sausage in the slow cooker.
Add Vegetables to the slow cooker.
In a bowl, combine all Sauce ingredients, including the roasted garlic, and pour over the sausage and vegetables.
Stir to combine.
Cook on low for 6-8 hours or on high for 3-4 hours.
Serve on Ciabatta Rolls, topped with Pecorino Romano Cheese and Fresh Parsley.
