Instructions
In a chilled bowl, gently combine all Burger Patties ingredients. Do not overmix. Keep cold until ready to cook.
Divide the beef mixture into 4 equal portions and form into loose balls.
Heat a large cast iron skillet or griddle over high heat until smoking hot.
Place a beef ball on the hot surface and immediately smash it down very thin with a sturdy spatula. Repeat with remaining beef balls, leaving space between each patty.
Cook for 1-2 minutes per side, until deeply browned and crispy.
Prepare the Truffle Aioli: In a small bowl, whisk together all Truffle Aioli ingredients.
Warm the Handmade Flour Tortillas on a dry skillet or over an open flame until pliable.
Assemble the tacos by filling each tortilla with a smashed burger patty, shaved Manchego Cheese, Pickled Red Onions, and a generous drizzle of Truffle Aioli. Garnish with Microgreens.
