Instructions
  1. In a medium bowl, gently combine all Burger Patties ingredients. Do not overmix.
  2. Divide the beef mixture into 4 equal portions and form into loose balls.
  3. Heat a large cast iron skillet or griddle over medium-high heat.
  4. Place a beef ball on the hot surface and immediately smash it down very thin with a sturdy spatula. Repeat with remaining beef balls, leaving space between each patty.
  5. Cook for 2-3 minutes per side, until browned and crispy.
  6. While the burgers are cooking, prepare the Caramelized Onions: Heat Olive Oil in a separate skillet over medium heat. Add Yellow Onion and cook, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized. Stir in Sugar during the last 5 minutes.
  7. Prepare the Chipotle Crema: In a small bowl, combine all Chipotle Crema ingredients and mix well.
  8. Warm the Flour Tortillas according to package directions.
  9. Assemble the tacos by filling each tortilla with a smashed burger patty, Caramelized Onions, Pickled Jalapeños, and a generous drizzle of Chipotle Crema.
  10. Serve immediately.
