Instructions
  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss Fingerling Potatoes and Brussels Sprouts with Duck Fat, Sea Salt, and Black Pepper.
  3. Spread Potatoes and Brussels Sprouts in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, or until tender and golden brown, flipping halfway through.
  5. While vegetables are roasting, in a large skillet, cook Duck Sausage over medium heat until browned and crispy.
  6. Add Red Onion to the skillet with the Sausage and cook until softened and caramelized, about 5-7 minutes.
  7. Add the roasted Potatoes and Brussels Sprouts to the skillet with the Sausage and Onion.
  8. Toss to combine and cook for another 5 minutes.
  9. Drizzle with Balsamic Glaze and sprinkle with Fresh Thyme.
  10. Serve immediately.
