Smoked Sausage And Potatoes
A slightly more refined version of the classic, featuring fresh herbs and a touch of Dijon mustard.

A slightly more refined version of the classic, featuring fresh herbs and a touch of Dijon mustard.
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss Potatoes with Olive Oil, Dijon Mustard, Rosemary, Thyme, Garlic Powder, Salt, and Black Pepper.
- Spread Potatoes in a single layer on a baking sheet.
- Bake for 25 minutes, flipping halfway through.
- While potatoes are baking, in a large skillet, cook Sausage over medium heat until browned.
- Add Onion and Bell Pepper to the skillet with the Sausage and cook until softened, about 5-7 minutes.
- Add the partially baked Potatoes to the skillet with the Sausage and Vegetables.
- Continue cooking for another 10-15 minutes, or until Potatoes are tender and golden brown.
- Serve immediately.
