1 pound Kielbasa Sausage-sliced into 1/2 inch rounds
2 pounds Yukon Gold Potatoes-cut into 1 inch cubes
1 Yellow Onion-chopped
1 Red Bell Pepper-chopped
3 tbsp Olive Oil

Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss Potatoes with Olive Oil, Dijon Mustard, Rosemary, Thyme, Garlic Powder, Salt, and Black Pepper.
  3. Spread Potatoes in a single layer on a baking sheet.
  4. Bake for 25 minutes, flipping halfway through.
  5. While potatoes are baking, in a large skillet, cook Sausage over medium heat until browned.
  6. Add Onion and Bell Pepper to the skillet with the Sausage and cook until softened, about 5-7 minutes.
  7. Add the partially baked Potatoes to the skillet with the Sausage and Vegetables.
  8. Continue cooking for another 10-15 minutes, or until Potatoes are tender and golden brown.
  9. Serve immediately.
