In a small bowl, combine the Crème Fraîche and Prepared Horseradish. Mix well and let sit for 10 minutes to allow flavors to meld.
In a medium bowl, gently fold in the flaked Steelhead, Lemon Juice, Chives, Dill, White Pepper, and Fleur de Sel into the Horseradish Crème Fraîche.
Mix gently to combine, being careful not to overmix. Taste and adjust seasonings as needed.
Cover and refrigerate for at least 1 hour to allow flavors to fully develop.
Before serving, gently fold once more. Transfer to a serving bowl and garnish with Microgreens.
