1/4 cup All-Purpose Flour

Instructions
  1. Preheat oven to 400°F (200°C). Bake Tater Tots according to package directions until golden brown and crispy.
  2. While tater tots are baking, prepare the Sausage Gravy. In a large skillet, cook Hot Breakfast Sausage over medium heat, breaking it up with a spoon, until browned.
  3. Drain off any excess grease. Sprinkle All-Purpose Flour over the cooked sausage and cook for 1 minute, stirring constantly.
  4. Gradually whisk in Whole Milk, stirring constantly to prevent lumps. Bring to a simmer and cook until thickened, about 5-7 minutes.
  5. Season with Black Pepper and Salt to taste. Remove from heat and stir in Sharp Cheddar Cheese until melted and smooth.
  6. Once tater tots are cooked, spread them evenly in a large oven-safe skillet or baking dish.
  7. Pour the Sausage Gravy over the tater tots, ensuring they are well coated.
  8. In a separate skillet, melt Butter over medium heat. Fry Eggs to your desired doneness.
  9. Top the smothered tater tots with fried Eggs and garnish with Fresh Chives. Serve immediately.
