A slightly refined version of the classic sopaipilla, featuring a touch of cinnamon in the honey glaze and a more tender dough.
Instructions
  1. In a large bowl, whisk together Flour, Baking Powder, Baking Soda, and Salt.
  2. Cut in the cold Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add the Buttermilk, mixing until just combined. Do not overmix.
  4. Turn the dough out onto a lightly floured surface and knead gently for 2-3 minutes.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Heat about 1 inch of Canola Oil in a large, heavy-bottomed pot or deep fryer to 375°F (190°C).
  7. On a lightly floured surface, roll out the dough to about 1/8 inch thickness. Cut into 3-inch squares or diamonds.
  8. Carefully drop a few sopaipillas at a time into the hot oil. Fry for 1-2 minutes per side, until golden brown and puffed up.
  9. Remove the sopaipillas with a slotted spoon and drain on paper towels.
  10. In a small saucepan, combine Honey, Cinnamon, and Butter. Heat over medium heat until melted and smooth. Drizzle over sopaipillas and serve immediately.
