An improved version of the classic South Carolina ribs, incorporating a few extra steps and ingredients for a deeper flavor profile. This version uses a dry brine and a more complex sauce.
An improved version of the classic South Carolina ribs, incorporating a few extra steps and ingredients for a deeper flavor profile. This version uses a dry brine and a more complex sauce.
Dry Brine the Ribs: Combine all Ribs ingredients in a bowl and rub generously over the ribs. Place ribs on a wire rack set over a baking sheet and refrigerate for at least 4 hours, or preferably overnight.
Make the Mustard Sauce: In a saucepan, combine all Mustard Sauce ingredients. Bring to a simmer over medium heat, stirring until sugar is dissolved. Reduce heat and simmer for 10 minutes, allowing flavors to meld.
Smoke or Bake the Ribs: Preheat oven to 275°F (135°C). Place ribs in a baking dish, cover tightly with foil, and bake for 3-4 hours, or until tender.
Glaze and Finish: Remove foil, brush ribs generously with Mustard Sauce. Continue baking for another 30-45 minutes, basting with sauce every 15 minutes, until ribs are sticky and caramelized.
Rest and Serve: Let ribs rest for 10 minutes before cutting and serving.
