Instructions
  1. Rinse the Raw, Green Peanuts thoroughly to remove any dirt or debris.
  2. In a large stockpot, combine all Brine ingredients and 12 cups (2.8 L) of water. Bring to a boil.
  3. Add the Raw, Green Peanuts and Optional Bay Leaf to the boiling brine.
  4. Reduce heat to medium-low, cover, and simmer for 2-4 hours, or until peanuts reach desired tenderness. Stir occasionally to prevent sticking.
  5. Taste and adjust seasoning as needed, adding more Kosher Salt or Cayenne Pepper to your preference.
  6. Remove from heat and let cool slightly before serving. Peanuts will continue to absorb flavor as they cool.
