Instructions
- Rinse the Raw, Green Peanuts thoroughly to remove any dirt or debris.
- In a large stockpot, combine all Brine ingredients and 12 cups (2.8 L) of water. Bring to a boil.
- Add the Raw, Green Peanuts, Optional Bay Leaf, and Optional Lemon slices to the boiling brine.
- Reduce heat to medium-low, cover, and simmer for 3-5 hours, or until peanuts reach desired tenderness. Stir occasionally to prevent sticking.
- Taste and adjust seasoning as needed, adding more Kosher Salt, Cayenne Pepper, or Brown Sugar to your preference.
- Remove from heat and let cool slightly before serving. Peanuts will continue to absorb flavor as they cool.
