Instructions
  1. Heat Duck Fat in a large skillet over medium heat.
  2. Fry Bologna slices for 4-5 minutes per side, until deeply golden brown and crispy. Remove from skillet and place on a paper towel-lined plate to drain.
  3. Lightly toast Brioche Bread slices.
  4. Spread Fig Jam on four slices of toasted Bread.
  5. Top each jam-spread slice with two slices of fried Bologna, two slices of Provolone Cheese, and a handful of Arugula.
  6. Drizzle with Balsamic Glaze.
  7. Cover with the remaining Bread slices and serve immediately.
