Instructions
Heat Duck Fat in a large skillet over medium heat.
Fry Bologna slices for 4-5 minutes per side, until deeply golden brown and crispy. Remove from skillet and place on a paper towel-lined plate to drain.
Lightly toast Brioche Bread slices.
Spread Fig Jam on four slices of toasted Bread.
Top each jam-spread slice with two slices of fried Bologna, two slices of Provolone Cheese, and a handful of Arugula.
Drizzle with Balsamic Glaze.
