In a medium bowl, combine all Ham ingredients.
In a separate small bowl, combine all Dressing ingredients and mix well.
Pour the Dressing over the Ham mixture and stir gently to combine.
Add the Vegetables and mix until well incorporated.
Chill for at least 30 minutes before serving to allow flavors to meld.
Serve on croissants, toasted bread, or lettuce wraps.
