8 oz Spaghetti
1 (15 oz) can Diced Tomatoes
1 (15 oz) can Black Beans-rinsed and drained
1 (10 oz) can Rotel-diced tomatoes and green chilies

Instructions
  1. Preheat oven to 350°F (175°C).
  2. Cook Spaghetti according to package directions. Drain.
  3. Season Chicken with salt and pepper. Cook in a skillet until browned and cooked through. Set aside.
  4. Combine all Southwest Sauce ingredients in a saucepan and simmer for 10 minutes.
  5. Make Cheese Sauce: Melt Butter in a saucepan. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Cheddar Cheese until melted.
  6. Combine cooked Spaghetti, Chicken, and Southwest Sauce in a large bowl.
  7. Pour the spaghetti mixture into a 9x13 inch baking dish.
  8. Pour Cheese Sauce over the spaghetti mixture.
  9. Top with Tortilla Chips and Jalapeños.
  10. Bake for 20-25 minutes, or until bubbly and golden brown. Serve with Sour Cream.
