1 lbChicken Breast-diced
8 ozSpaghetti
1 (15 oz) canDiced Tomatoes
1 (15 oz) canBlack Beans-rinsed and drained
1 (10 oz) canRotel-diced tomatoes and green chilies
A slightly more flavorful version of the classic, incorporating Southwest spices and a creamy cheese sauce. This casserole offers a bit more depth and complexity.
Cook Spaghetti according to package directions. Drain.
Season Chicken with salt and pepper. Cook in a skillet until browned and cooked through. Set aside.
Combine all Southwest Sauce ingredients in a saucepan and simmer for 10 minutes.
Make Cheese Sauce: Melt Butter in a saucepan. Whisk in Flour and cook for 1 minute. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Reduce heat and stir in Cheddar Cheese until melted.
Combine cooked Spaghetti, Chicken, and Southwest Sauce in a large bowl.
Pour the spaghetti mixture into a 9x13 inch baking dish.
Pour Cheese Sauce over the spaghetti mixture.
Top with Tortilla Chips and Jalapeños.
Bake for 20-25 minutes, or until bubbly and golden brown. Serve with Sour Cream.
