Instructions
🎙️ Cook with voice coach- Preheat oven to 400°F (200°C). Roast the Butternut Squash until tender, about 30-40 minutes. Puree the roasted squash until smooth.
- Prepare the Gruyère Sauce: Melt the Butter in a saucepan over medium heat. Whisk in the Flour and cook for 1-2 minutes to create a roux. Gradually whisk in the Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes. Stir in the Dijon Mustard, Gruyère Cheese, and Parmesan Cheese until melted and smooth. Season with Salt and White Pepper.
- Sauté the Shallot in a separate pan until softened. Deglaze the pan with Dry Sherry and cook until reduced by half.
- In a large bowl, combine the Butternut Squash Puree, cooked Heirloom Hominy, sautéed Shallot, Smoked Paprika, Ground Coriander, and Nutmeg.
- Pour the Gruyère Sauce over the squash and hominy mixture and stir to combine.
- Pour the mixture into a greased 9x13 inch baking dish.
- Bake for 20-25 minutes, or until golden brown and bubbly.
