  1. Preheat oven to 400°F (200°C). Roast the Butternut Squash until tender, about 30-40 minutes. Puree the roasted squash until smooth.
  2. Prepare the Gruyère Sauce: Melt the Butter in a saucepan over medium heat. Whisk in the Flour and cook for 1-2 minutes to create a roux. Gradually whisk in the Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes. Stir in the Dijon Mustard, Gruyère Cheese, and Parmesan Cheese until melted and smooth. Season with Salt and White Pepper.
  3. Sauté the Shallot in a separate pan until softened. Deglaze the pan with Dry Sherry and cook until reduced by half.
  4. In a large bowl, combine the Butternut Squash Puree, cooked Heirloom Hominy, sautéed Shallot, Smoked Paprika, Ground Coriander, and Nutmeg.
  5. Pour the Gruyère Sauce over the squash and hominy mixture and stir to combine.
  6. Pour the mixture into a greased 9x13 inch baking dish.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
