Instructions
  1. Preheat oven to 400°F (200°C). Toss the Butternut Squash with 1 tbsp of the melted Butter, Salt, and Pepper. Roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While the squash is roasting, sauté the Onion in the remaining 2 tbsp melted Butter until softened, about 5 minutes. Add the Green Chiles and cook for another 2 minutes.
  3. In a large bowl, combine the roasted Butternut Squash, Hominy, Spices, and sautéed Onion and Green Chiles.
  4. Stir in the Heavy Cream.
  5. Pour the mixture into a greased 9x13 inch baking dish.
  6. Sprinkle the Cheddar Cheese and Pepper Jack Cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
