Instructions
- Cook the rice noodles according to package directions. Drain and set aside.
- Combine all Sauce ingredients in a bowl and whisk together. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken and cook until browned and cooked through.
- Add the garlic and onion to the skillet and cook until softened.
- Pour the Sauce over the chicken and vegetables and bring to a simmer.
- Add the cooked rice noodles, bean sprouts, and scrambled eggs to the skillet and toss to combine.
- Cook until heated through.
- Serve immediately, garnished with chopped peanuts, green onions, and lime wedges.
