Instructions
Preheat oven to 450°F (230°C) with a pizza stone inside, if available.
Cook Cavatappi pasta according to package directions. Drain and set aside.
Roll out the Neapolitan pizza dough to a thin crust and place on a lightly floured pizza peel or baking sheet.
In a saucepan, melt Unsalted butter over medium heat. Whisk in flour and cook for 2 minutes, creating a roux.
Gradually whisk in Heavy cream until smooth. Bring to a simmer, stirring constantly.
Reduce heat and stir in Gruyère cheese, White cheddar cheese, Nutmeg, Cayenne pepper, Salt, and White pepper until cheese is melted and sauce is smooth.
Add cooked pasta to the cheese sauce and stir to combine.
Spread the Mac & Cheese mixture evenly over the Flatbread dough, leaving a small border.
Scatter chopped Lobster meat over the Mac & Cheese.
Carefully slide the flatbread onto the preheated pizza stone (or bake directly on the baking sheet) for 12-15 minutes, or until crust is golden brown and bubbly.
Drizzle with Truffle oil and sprinkle with Chopped chives before serving.
