Marinate Chicken with Soy Sauce and Cornstarch for 10 minutes.
Cook Noodles according to package directions. Drain and rinse with cold water.
While noodles are cooking, stir-fry Chicken in a wok or large skillet until cooked through. Set aside.
Prepare the Sauce. In a medium bowl, whisk together Peanut Butter, Soy Sauce, Rice Vinegar, Sesame Oil, Maple Syrup, Sriracha, Garlic, Ginger, and Hoisin Sauce until smooth.
Add the cooked Noodles and stir-fried Chicken to the bowl with the Sauce and toss to coat evenly.
