To make the Caramelized Onions, heat Olive Oil in a skillet over medium-low heat. Add sliced Yellow Onion and Sugar. Cook, stirring occasionally, for 20-25 minutes, or until onions are deeply golden brown and caramelized.
In a medium bowl, combine all Tuna Filling ingredients and mix well.
Spread softened Butter on one side of each slice of Bread.
Place two slices of Bread, butter-side down, in a skillet over medium heat.
Top each slice with 2 slices of Monterey Jack Cheese, then divide the Tuna Filling and Caramelized Onions evenly between the two slices.
Top with the remaining Monterey Jack Cheese and Bread slices, butter-side up.
Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and bubbly.
