Rub Chicken Thighs with Olive Oil and Smoked Paprika. Slow-roast Chicken for 60-75 minutes, or until internal temperature reaches 165°F (74°C). Let cool and shred.
Prepare Black Garlic Aioli by combining all Aioli ingredients in a food processor and blending until smooth.
Toss Waffle Fries with Truffle Oil and Sea Salt. Cook Waffle Fries according to package directions.
Spread Black Garlic Aioli on two slices of Bread. Layer with Arugula, Tomato, shredded Chicken, Bacon, Avocado, and Gruyere Cheese. Top with remaining Bread slices.
Cut each sandwich in half and serve immediately with Truffle Waffle Fries.
