To make the Pumpkin Spice Syrup, combine Water, Sugar, Pumpkin puree, Cinnamon, Ginger, Nutmeg, and Cloves in a small saucepan. Bring to a simmer over medium heat, stirring until sugar is dissolved. Reduce heat and simmer for 10 minutes, then remove from heat and let cool completely.
Steam Oat milk using an espresso machine or milk frother.
Brew espresso.
Add 2-3 tbsp of Pumpkin Spice Syrup and Vanilla bean paste to the steamed oat milk. Stir well to combine.
Pour the espresso into a mug, then top with the pumpkin spice oat milk.
Garnish with Homemade whipped cream and a pinch of freshly grated nutmeg.
