Instructions
  1. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more, until fragrant.
  4. Stir in Tomato Paste and cook for 2 minutes, stirring constantly.
  5. Add Tomatoes, Dried Oregano, Salt, Pepper, Sugar, and Red Wine Vinegar to the pot.
  6. Bring to a simmer, then reduce heat to low, cover, and cook for 30 minutes, stirring occasionally.
  7. While tomatoes are simmering, prepare the garlic bread: In a small bowl, combine softened Butter and minced Garlic. Spread evenly over Baguette slices.
  8. Bake garlic bread in a preheated oven at 350°F (175°C) for 10-12 minutes, or until golden brown.
  9. Stir in Fresh Basil and Fresh Parsley into the stewed tomatoes just before serving.
  10. Serve hot with garlic bread.
